WINEMAKING
The grapes undergoes a soft pressing in horizontal presses. The must thus obtained is centrifuged and then cooled to 1° c. in order to prevent it from fermenting. After which it is clarified and filtered in temperature-controlled tanks (autoclaves) in which, wih the insrtion of selectted yeasts, alcoholic fermentation comes about at a very low temperature, 15° C., thus ensuring that all the wine’s natural aromas remain intact

COLOOUR Deep cherry-red
BOUQUET
Alongside the characteristic brushwood aroma that distinguishes it, initially it has a certain, very contained winy perfume, which then opens out to offer fascinating hints of sweet cured tobacco, withered roses and honey
TASTE Upon tasting, it comes out as sweet and fresh on the palate, with a good opening of initial acidity and a very slight touch of tannins, giving the wine personality and body as well as its characteristic mark
SUGGESTIONS With all types of sweets, tarts, pies and fruit cocktails, so long as they are not chocolate-based

WINE CHARACTERISTICS
This is an elegant spumante with a fine, persistent sparkle created by bottle fermentation. It is pale straw yellow coloured with abundant, fine and very persistent perlage. Persistent scents of yeast and crusty bread. The flavour is fine and elegant with a good structure. Longevity further enhances its qualities. An excellent aperitif which is the ideal accompaniment to hors d’oeuvres and shellfish, and may also be served throughout a meal. Serve chilled at a temperature of 6-8°C
